I found a website about the Children's Home of Lubbock. Basically they have opportunities for you to go and volunteer by organizing events for the children or just spending time with them. I am sure that if you called them, they would love for student-teachers to come out and organize tutoring times for kids who want help with school work.

There are a lot of things that you can learn about kids and being a teacher just by spending time with these children... even if you are not teaching them at the time, you would be surprised at how much you can learn.

Service Learning
I found this website about the National Youth Leadership Council which deals with Disaster Relief Resources for Recovery. Has information regarding how they reach out to young people to get involved through service learning and encouraging relief effort. An idea is to get students in your class to join the National club or even start their own in response to a disaster. It could be a great way to get students interested in whats going on around the world and in their community.
